Anne's Coconut Graham Cookies
1 1/2 cups finely crushed graham cracker crumbs
1/2 cup all-purpose flour
2 teaspoons baking powder
1 (14-ounce) can sweetened condensed milk
1/2 cup butter, softened
1 1/2 cups semisweet chocolate chips
1 1/3 cups sweetened flaked coconut
1 cup chopped walnuts (optional)
  1. Preheat oven to 375*F (190*C).
  2. In a medium bowl, whisk together the graham cracker crumbs, flour and baking powder; set aside.
  3. In a large mixing bowl, beat sweetened condensed milk and butter on medium-high speed until smooth. Stir in crumb mixture just until blended. Fold in raisins or chocolate chips (or both), coconut and walnuts, if using.
  4. Drop by tablespoons onto a greased cookie sheet, pressing cookies to flatten slightly.
  5. Bake for 9 to 10 minutes or until lightly browned. Cool 1 to 2 minutes before removing from cookie sheets. Transfer to wire racks to cool completely.

Makes 3 dozen.

* Or use milk chocolate chips, chopped dates, golden raisins or a combination.
